Fountain, Minnesota, mobile coffee shop Sips n’ Sugar donated to Minter’s family its day’s sales from an event in Preston Saturday, Aug. 15 . A colleague established an online meal sign-up for Minter’s family including two young children and a GoFundMe has raised more than $40,000 to help her family as well.

Minter was hurt and her family’s golden retriever, Minnie, was killed in the crash on U.S. Highway 52 near the Jade Road intersection at about 7:20 a.m., according to a Minnesota State Patrol crash report.

Minter was taken to Mayo Clinic Hospital- Saint Marys. According to an update to the family’s GoFundMe Wednesday, Aug. 19, Minter has been moved from intensive care and continues to make progress in her recovery. She had surgery to repair fractures to her legs Monday.

“She is talking more, communicating more, and even requesting pizza for dinner,” Minter’s colleague and GoFundMe organizer wrote. “Katie continues to show the strength and determination we’ve always known she has.”

Meals for the family are being collected in Stewartville while Minter’s kids are staying with family and her husband stays with her in Rochester to help her with her recovery.

Sips n’ Sugar is continuing to collect donations for Minter and her family.

On her way to her favorite coffee shop this morning, Katie Minter and her beloved pup, Minnie, were involved in a serious car accident. Tragically, Minnie did not survive the accident, and Katie remains in critical condition.
